Maple-Cinnamon Crunch Cereal

A real-food, good-for-ya, and extremely tasty breakfast cereal….. FOR THE CEREAL BASE: 3 cups buckwheat groats 3 TBSP coconut oil, melted 1/4 cup maple syrup (or approx 24 drops of liquid stevia) 1/2 tsp vanilla 2 tsps cinnamon 1/4 tsp pure salt Rinse buckwheat in fine mesh strainer and transfer to a large bowl. Add approximately 9 cups of water, and let sit at room temp, covered, anywhere from 1 to 6 hours. Rinse and drain well (in same fine mesh strainer) and set aside. Tempeh Sausage Crumbles

2 packages soy tempeh (total of 16 oz) 2 TBSP fennel seeds 2 tsps dried basil 2 tsps dried oregano 1 tsp red pepper flakes 1 tsp dried sage (or 3/4 tsp ground sage) 4 garlic cloves, minced or crushed 1/4 cup soy sauce 2 TBSPs extra virgin olive oil 3 TBSPs lemon juice (juice of 1 lemon) In a large saute pan, crumble the tempeh (using your hands) and add enough water to almost cover it (about 3/4 cup). 2 cups cooked, short grain, brown rice 1 & 1/2 cups milk of choice 1/4 tsp sea salt 1/4 tsp vanilla (optional) 3 TBSP (give or take) raisins (optional) 1 – 2 TBSPs pure maple syrup (to taste) or stevia 1/2 tsp cinnamon, or nutmeg, or cardamom (or a combination) In a small saucepan, combine rice, milk, salt, vanilla (& raisins, if using), & bring to boil. 2 eggs rounded/heaping 1/2 tsp spice mix (see below) butter, ghee, or coconut oil (to cook the eggs in) Heat butter or oil in a pan over medium heat. Yet another version of oatmeal we like for variation, moreso in the warmer months…. 1/2 cup rolled oats 1/2 cup milk of choice 1/2 TBSP chia seeds (optional) 1/8 tsp cinnamon 1/2 TBSP ground flax seeds berries extra milk for serving Before bed, mix together oats, milk, chia seeds, and cinnamon.
