Apple-Cinnamon-Walnut Pancakes

2 large eggs, beaten 1 apple, grated, OR one ripe (speckled) banana, mashed 1/2 tsp cinnamon 2 TBSP (more or less) walnuts or pecans, chopped (or handful of blueberries) butter, ghee, or coconut oil for frying Mix everything together and fry pancakes a few minutes on each side, in a lightly oiled pan. Sweet Potato Fritters

1 egg 2 cups shredded sweet potatoes (about 1 medium sweet potato) 1/2 tsp cinnamon 1/4 tsp pure salt coconut oil for frying extra cinnamon for sprinkling In a medium bowl, beat the egg. Add sweet potato, cinnamon, salt & stir until combined. Add oil to a large skillet & heat over medium-high heat. Add no more than 2 TBSPs of sweet potato mixture for each pancake and press down to flatten with back of spoon. Cook a few mins on each side until golden. Blueberry Oat Pancakes

2 cups oat flour or ground oats (see notes) 2 TBSPs aluminum-free baking powder 1/4 tsp pure salt 1/4 tsp ground cardamom 1/2 tsp cinnamon 2 cups milk of choice 2 TBSPs melted butter, ghee, or coconut oil about 3/4 cup fresh or frozen blueberries In a large bowl, add the dry ingredients & whisk to combine well. Coconut Pancakes

4 eggs 4 TBSP coconut oil (or butter, or ghee), melted 1/2 tsp pure vanilla extract 2/3 cup coconut milk 1/4 tsp pure salt 6 TBSP coconut flour, sifted 1/4 tsp baking powder organic berries Mix together eggs, oil, vanilla, coconut milk & salt. Combine coconut flour w/ baking powder (I put them both into the sifter together), and whisk into wet ingredients until well combined (no lumps).
