Carrot & Raisin Salad

2 TBSP lemon juice 1 TBSP extra virgin olive oil 2 TBSP chopped fresh mint leaves 1 TBSP minced fresh chives pure salt to taste 1 lb carrots (about 4 large), peeled & shredded 1/4 cup raisins (or a 1 oz box) In a salad bowl, whisk together the lemon juice, oil, mint, chives, and salt to taste. Feta, Fig & Toasted Pine Nut Salad

Mixed salad greens 2 – 4 TBSPs feta cheese 1 – 2 TBSPs pine nuts, toasted 4 dried figs, cut in half or quarters balsamic vinaigrette (or dressing of choice) Toast pine nuts in a dry skillet for a few minutes until aromatic & slightly browned. Toss everything together with dressing of choice and serve. Fresh Whipped Cream

1 cup high quality cream 1 – 2 TBSP sweetener of choice (to taste), or 6 – 12 drops liquid stevia 1 tsp vanilla extract Use an electric mixer to blend the cream. 6 medium carrots, grated 1 & 1/2 cups feta cheese (roughly 6 oz) 4 TBSP extra virgin olive oil 1 TBSP apple cider vinegar (or to taste) 1/4 tsp pure salt Mix together and enjoy.
