Buttery Lentils & Veggies

2 TBSP butter, ghee, or coconut oil 1/2 cup onions, diced 1 cup green or brown lentils* (sprouted if possible or soaked overnight) (see notes below) 1/2 cup celery, diced 1/2 cup red bell pepper, diced pure salt & pepper to taste Melt butter or oil in medium skillet over low heat. 2 egg yolks 1 TBSP lemon juice or apple cider vinegar 1 tsp good quality mustard 1/4 tsp pure salt 3/4 cup extra virgin olive oil (or a combination of olive oil and coconut oil) METHOD 1 – IMMERSION BLENDER: Add ingredients to tall measuring cup in order listed. Version 1 2 large sweet potatoes, peeled & cut into big, chunky fries 2 TBSP melted coconut oil (or oil of preference) 1 or 2 tsps dried rosemary 1 tsp dried red pepper flakes Preheat oven to 400.
