Blueberry Oat Pancakes
2 cups oat flour or ground oats (see notes) 2 TBSPs aluminum-free baking powder 1/4 tsp pure salt 1/4 tsp ground cardamom 1/2 tsp cinnamon 2 cups milk of choice 2 TBSPs melted butter, ghee, or coconut oil about 3/4 cup fresh or frozen blueberries In a large bowl, add the dry ingredients & whisk to combine well. Mix in the milk, then the melted butter (or oil), then the blueberries. If the mixture is a little loose at first, you can let it sit for a few mins to thicken.
