Quick & Spicy Swiss Chard

2 TBSP coconut oil, butter, or ghee
4 garlic cloves, crushed or minced
crushed red pepper flakes to taste (1/2 tsp – more or less)
freshly ground black pepper to taste
pure salt to taste
1 bunch swiss chard, stems removed & roughly chopped

  • Warm oil or butter in large saute pan over medium heat.
  • Add garlic and cook until just golden (1 – 2 mins).
  • Sprinkle in crushed red pepper, black pepper, and salt to taste.
  • Add swiss chard, and saute until wilted but not over-done (approx 5 mins).

SIDE NOTES:

~ Very simple and extremely delicious (nice when those 2 go hand & hand). As I’ve mentioned before, it’s a rare vegetable that doesn’t taste good sautéed for a few minutes with butter & garlic. The crushed red pepper gives these simple greens a nice kick.

~ Use this as a side dish (pictured above with SESAME-MILLET and LENTILS-IN-ONION-GRAVY), OR – make a one dish meal out of it by tossing with cooked or canned beans (cannellinies or chick peas are nice with this), and either whole grain pasta, brown rice, or roasted potatoes.

  • Love this recipe. I finally found some swiss chard in a grocery store about an hour and a half from me. I made it with black beans, chanterelles, and some corn.
